Of all the recipes I have tried for making sunday pancakes with the kids this classic has been the easiest and the most consistent. Practice doing it exactly per the recipe until you know it and can make them right before you try changing it. if you want to add chocolate chips or blueberries etc add them to the liquid first then mix. Have fun. Enjoy and be patient. a 3 minute timer will be your best friend. If they take longer than 3 minutes per side your temperature is too low. If they burn the temperature is too high. find the balance on your stove and don't be afraid to mess up a few times. this is how we learn.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or substitute with milk)
  • 1 egg
  • 2 tablespoons melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract (optional)
  • Additional butter or oil for cooking
  • Maple syrup, fresh fruit, or other toppings (optional)

Instructions:

  1. Preheat the Griddle or Pan: Heat a non-stick griddle or frying pan over medium heat (on my stove this is between 4-6). You can test if it's hot enough by sprinkling a few drops of water on it. If the drops sizzle and evaporate, it's ready. Or use an infrared temp sensor gun $25 amazon aim for 275F

  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. This helps to evenly distribute the leavening agent and sugar.

  3. Combine Wet Ingredients: In another bowl, beat the egg and then add the buttermilk, melted butter (or oil), and vanilla extract (if using). Mix well.

  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter must be lumpy; over mixing will make the pancakes tough.

  5. Grease the Griddle or Pan: Add a small amount of butter or oil to the hot griddle or pan and spread it evenly. This prevents the pancakes from sticking. Wipe off access.

  6. Cook the Pancakes: Pour pancakes on the griddle to whatever size you like. Cook until bubbles form on the surface and the edges start to look set, usually about 2-3 minutes.

  7. Flip and Cook the Other Side: Carefully flip each pancake with a spatula and cook the other side until it's golden brown, usually another 2-3 minutes.

  8. Serve: Remove the pancakes from the griddle and place them on a plate. You can keep them warm by covering the plate with a clean kitchen towel or by placing them in a preheated oven at a low temperature.

  9. Enjoy: Serve your pancakes hot with maple syrup, fresh fruit, whipped cream, or any other toppings you prefer.

I emptied racks with utmost care,
Each plate and cup, a burden to bear,
And when it came to pots and pans,
I scrubbed away, like a steadfast man.

I refilled the dishwasher, pristine and grand,
A feat so noble, in dish-washing land,
Now I jest and cheer, with pride displayed,
"I refilled the dishwasher, where's my parade?"

With laughter and joy, let us celebrate,
This mundane task I did not underrate,
For in the realm of household grace,
A parade awaits in this funny embrace!

So here's my parade, a poem in rhyme,
For chores well done, in my own time,
In jest and love, we share the jest,
For a clean kitchen,
we both are blessed!

Obituary for Mary Rosanna Worden/Wills/Sullivan (Marr) Hersey (Mom)




Mary Rosanna Worden/Wills/Sullivan (Marr) Hersey, a cherished mother, wife, grandmother, great-grandmother, and friend, was born on August 20, 1944, and passed away peacefully in her sleep at the Saint John Regional Hospital on May 14, 2023, at the age of 78. She was a luminous presence who touched countless lives with her warmth, kindness, and zest for life.

Mary leaves behind her sister Betty, sons Alex, David (Jo-elle), and Steven, and her stepchildren Sherry (Harold), Scott (Tina), Stacey (Bill), Stephen (Krista), Anita(Larry), Brian(Lisa), and Cheri(Brian). She was also a proud grandmother to seven grandchildren and a great-grandmother to five great-grandchildren.

Her life was filled with joyous moments, from family visits and acting silly with the children to enjoying music, dancing, reading, and watching her favourite TV shows. She loved boating with her cherished husband, Bill Worden, and savoured moments of tranquillity, often found relaxing under the shade of trees with a good book. Her favourite flowers were her mother's roses that grew in the front yard and her tiger lilies along the driveway.

Mary's career journey was diverse, serving as a waitress, a brush assembler at the Simm's brush factory, a dry cleaner, and until retirement, a long-serving custodian at KVHS. Her culinary skills were renowned, especially her homemade donuts, cookies, pies, and birthday cakes. Her favourite treats were chicken bone candies and lemon squares, and she made a fabulous sweet iced tea that was loved by all.

As we mourn Mary's passing, we take solace in the belief that she is now reunited with her parents, Isabelle and Alfred, her cherished husband, Billy, and all her beloved pets.

Mary's Celebration of Life/Wake will be Wednesday, May 17. The visitation is from 9 am-11 am, with a service at 11 am, then to Ocean View Memorial Gardens.

We extend our heartfelt gratitude to everyone who held Mary dear. Your love and support meant the world to her.

In the late '80s, my journey as a professional DJ began in Saint John, New Brunswick, Canada, where I was fortunate to be part of a thriving and supportive DJ community. Over the years, I've had the privilege of spinning tracks at sea cadet dances, school sock hops, weddings, and nightclubs, meeting incredible people from all over the world in the process. With the rapid advancement of DJ technology and the rise of platforms like Twitch, I've recently decided to make a comeback and reconnect with my DJ family.

My career started in 1987, playing for sea cadet dances and school sock hops. As time went by, I began picking up gigs at weddings and nightclubs. I lost count after DJing for over 500 weddings, but each one was an honour, allowing me to witness the magic of humanity at its happiest.

As a club DJ in the port city of Saint John, I had the unique opportunity to meet people from all over the world, thanks to the regular arrival of cruise ships near the waterfront. THE HONEYMOON HORROR STORY (Fiction 4000words)



     Today I bring you a special treat, if you like short stories. This is a story, I wrote for a contest. Although it did not make the cut into the finalists, I am still very proud of it. It was great fun getting to know the characters and inventing the entire scenario. I hope you enjoy reading it as much as I enjoyed writing it. Be warned it is a Short Story form Fiction at 4000 words. Should take 15 minutes to read.







THE HONEYMOON HORROR STORY

     It was supposed to be the perfect honeymoon. When Emily's father offered them his beloved 30-foot sailboat for the occasion, they couldn't resist. They were young and adventurous, and the whole world was at their feet. Of course, Emily was nervous, and it was her way, but she couldn't help it. Little did she know the horrors that awaited them on the open sea.

     They had planned this trip for years, and according to all the weather services, it should be smooth sailing for at least a week. James was a seasoned recreational sailor, and he often spent weekends with her dad working on the boat or cruising the local river. She had no doubt she was in good hands.

     The first leg of their journey would take them north along the eastern seaboard. It was a fantastic day with just the right wind for sailing. Emily tried to push her worries to the back of her mind and enjoy the moment. She spent most of the day contemplating her book and virgin daiquiris. Occasionally, James would interrupt to fix her a drink.

     As Emily took in the day, she couldn't help but admire how the sun glinted off James's new linen outfit, highlighting the muscles of his tanned arms and chest. Emily knew he wore it to please her. He would have been happy wearing his old house shorts and a ratty t-shirt. The fabric rustled with the wind, sending a pleasant, fresh scent wafting her way. James was the epitome of tall, dark, and handsome. She tried to focus on the present and not let her thoughts ruin the moment.

     Gentle breezes were ruffling Emily's hair, and the sun warmed her skin as they glided over the waves. The sound of the water lapping against the hull and the sails luffing overhead created a peaceful, soothing atmosphere. They had sailed roughly 70 nautical miles north of Daytona Beach, and according to James, this was great.

     As the sun began to set, Emily retired to the lower deck. James leaned down with a warm smile and gently kissed her lips. "Sweet dreams. I love you," he said, his tone full of tenderness and his eyes soft with affection.

"I love you too, Babe," she replied, smiling. "This has been a wonderful day."

Little did they know that was all about to change. She let the lapping waves guide her off to sleep.

     Thrown violently from her bunk, Emily woke with a start, her heart pounding in her chest as she struggled to orient herself in the darkness. The sound of the storm raging outside was deafening - the wind howling, the rain pounding against the hull, and the thunder crashing like cannons.

"James, what's happening?" she cried out, trying to make sense of the chaos around her.

     "Stay down below, Emily!" James ordered, his voice urgent. "I don't know what's happening, but the weather has turned bad fast. We're in for a rough night."

     Emily capitulated, knowing now was not the time to fight. She huddled under the blankets as the boat was tossed around by the raging storm. She could hear James moving around above deck, and she was terrified.

     James joined Emily below deck, insisting she put on a life suit. Emily's nerves were already on edge, and the added layer of protection only heightened her sense of unease. It wasn’t too long before the vessel fully capsized. Convinced this was the end, she was terrified.

     James remained calm, determined to reassure Emily everything would be okay. "It's going to be alright," he repeated, his manner steady and optimistic. "Remember, the boat is foam-filled and unsinkable. We'll make it through this." And despite her fear, Emily found comfort in James's words, hanging onto them like a lifeline as they rode out the storm.

     As the storm raged, Emily and James clung to life, praying for a miracle. The winds howled outside, causing the boat to pitch and roll violently. Debris from the storm floated past the windows, a reminder of the dangers lurking outside. Emily's life suit felt constricting and claustrophobic, adding to her panic and helplessness.

     For what seemed like hours, they drifted at sea, fully at the mercy of the storm. The roar of the wind, creaky hull and pounding waves were deafening. Emily couldn't help but wonder if this was the end.

     But just when all hope seemed lost, the boat hit something. The upturned vessel eventually came to a rest. After an eternity, the fierce storm passed, leaving behind the gentle sound of waves lapping against the shore. Emily looked at James, disbelieving they were alive.

     The damage was extensive. The storm had destroyed all the electronics and utterly smashed the stern of the boat, dropping the batteries somewhere. The lifeboat carrying all the emergency equipment was nowhere to be found. Losing the electronics cut them off entirely. As they surveyed the wreckage, Emily and James couldn't help but feel hopeless. They were stranded, with no resources or way to call for assistance.

     Emily turned to James, unleashing all her fear and anxiety on him. "You and this stupid trip? Why couldn't we just have a normal honeymoon?" Emily marched off in a huff to cry.

     After getting it out of her system, Emily returned. Approaching James, tears streamed down her cheeks. She apologized for lashing out at him earlier. "I'm so sorry," she said, her voice shaking. "I'm just so scared, and I didn't mean what I said."

     James hugged her tightly, his own eyes shining with unshed tears. "It's okay, Hun," he said, his voice soothing.

     "What are we going to do?" Emily asked, her voice breaking. "We're stranded on this island with no way to call for help. How are we going to survive?"

     James took a deep breath, trying to remain strong for both of them. They had a few water bottles, but James pointed out they needed to find more. It didn't take too long. "Don't drink directly from the stream," James cautioned, sensing her thirst. "We might get sick. If we need the water, we'll have to boil it." Emily nodded, understanding the importance of caution in their situation.

     Following the stream, they searched for shelter. After a while, they came across a small waterfall next to a natural cave-like alcove. "This will do," James said, surveying the area. "We can make camp here in case of more bad weather.."

     Grateful for the slight reprieve, Emily and James settled into the cave, trying to make the best of their situation.

     Each day, they returned to the shipwreck, gathering what supplies they could carry and bringing them back to the cave. They used the remnants of the sails to cover the opening and built a makeshift door out of scrap plywood. They retrieved cushions and folding chairs to furnish their new home. Emily, who had been prescribed anxiety medication by her doctor, counted the days until her supply ran out. In the meantime, they did their best to signal for help. Thanks to James' ingenuity, they used an old pair of her dad's glasses they found in the boat to light a fire. They also wrote "HELP" in giant letters using rocks, hoping a plane might spot their distress signal. They had cell phones, but they had been lost at the bottom of the ocean when the boat turned over. Emily's thoughts were consumed by what had gone wrong and how it all confirmed her worst fears.

     Emily had been tending to the fire on the beach and boiling some water. When she returned to the cave, she was intrigued to find James frantically constructing makeshift spears out of sticks and palm leaves. His fingers nimbly ripped the leaves into strips and carved spears using the survival knife her father had given him last Christmas.

     He looked at her with a forced smile, his gaze not meeting hers. "Just trying to stay busy, Em," he replied, returning to his work.

     Watching him construct what appeared to be a medieval-style spike wall interwoven with brambles and thorns, she couldn't shake the feeling that something was wrong.

"James, what's going on?" She pressed on, approaching him, placing a hand on his arm, eyes filled with concern.

"It’s like I said," he retorted, "staying busy."

"James," Emily said, her voice firm. "What are you not telling me?"

     James hesitated, his eyes glued to the stick as he twirled it faster and faster. Finally, with a heavy sigh, he looked up at Emily, his eyes filled with fear.

     "I saw something out there today," he said, his voice shaking. "While I was out gathering food and supplies, I came across a set of tracks," he sighed "they looked like cat prints." he paused, "Really BIG Cat prints."

"I found more tracks," James continued, his voice heavy with worry. "It scared the crap out of me, but I've fortified the cave and made some weapons. We should be okay now."

     Emily's stomach dropped as she took in James's words. The ocean stranded them on a strange island, with no way to call for help and no signs of civilization anywhere. She couldn't believe this was happening.

     While trying to organize her thoughts, Emily couldn't help but feel angry and overwhelmed. Just a week ago, they were living a normal life in a quaint little town in Florida, planning their dream honeymoon. Now, they were living like cave people, struggling to survive. To make matters worse, they were being hunted. "Oh hell," Emily thought, tears welling up in her eyes. "Why did this happen to us? We were just starting our lives together, and now we're stuck here. It's not fair." She couldn't believe how drastically their lives had changed in such a short amount of time. She just wanted to go home, she needed to hug her dad, and she wanted a hot shower. "Why?" she thought, and it was written all over her face. She wasn't sure James could tell, but she figured he had a pretty good idea of what she was thinking.

     As Emily listened to the rain pattering against the makeshift door, she couldn't shake the feeling that they were being hunted. The sound of the rain made it difficult to hear any movement outside the cave. The air inside was musty and damp, and the smell of wet earth and mould hung heavy. She tried to push the thought out of her mind, focusing instead on the warmth of the fire and the sound of James's steady breathing as he stood guard at the entrance.

     She couldn't help but feel a sense of tension and fear as if they were ancient cave people huddled together for warmth and safety. She imagined families huddled around a fire, hunting mastodons and other dangerous beasts for food. The outside world felt so precarious and uncertain.

     The night dragged on, the rain picking up intensity, the drizzle turning into a steady downpour that threatened to drown out the sound of the fire. Emily couldn't help but feel a sense of foreboding as the thunder rumbled in the distance, the storm building in intensity. She wrapped her arms around herself, trying to ward off the chill that had settled in her bones.

     Despite the warmth of the fire, Emily couldn't shake the feeling of cold dread that seemed to seep into every inch of her being. She found herself straining to hear any sign of the giant cat they knew was out there, stalking them in the darkness. The sound of the rain and the thunder made it challenging to be sure, but every so often, she thought she could hear a faint growl or the rustling of brush just outside the cave.

     As the night wore on, the storm reached its climax, the lightning illuminating the cave in flashes of blinding light and the thunder crashing like a thousand drums. Emily huddled closer to the fire, nerves stretched to the breaking point. She knew the giant cat could strike at any moment, tearing through the makeshift door and dragging them out into the storm.

     Just as she was beginning to feel like she couldn't take the tension any longer, a bolt of lightning lit up the cave, casting everything in a bright, flickering light. And in that brief moment, Emily could have sworn she saw an ominous shadow flit across the cave.

     James leaned against the door, his silly pointy stick in hand. Despite his valiant efforts to appear calm, Emily could see the tension etched into his features and the tears brimming in his eyes. "I'm sorry, Beautiful," he said, his voice quivering. "I never wanted this. I wanted to give you the perfect honeymoon. You are the most incredible woman I have ever known." James wiped his tears and tried to relax, but time was up.

     The first attack made them jump, the brush shaking violently. Emily screeched, then clasped her hand over her mouth to stifle the sound. James's eyes became wild as he frantically reinforced the door. He was doing everything in his power to protect them. The beast continued, and Emily could feel her stomach in knots. To say she was scared was an understatement. All she wanted was for this nightmare to be over. Emily huddled in the corner of the cave, watching as man and beast battled for their lives. She could see the fear in his eyes as he jabbed through the brush with his spear. 

     The creature was massive and powerful. Abruptly, a huge paw tore through the branches and ripped open James's leg. Emily let out a scream, tears streaming down her face. They had to do something. Ferociously swearing through the pain, James returned the attack stabbing the meaty paw. Emily watched in awe as James hammered at the intruder until it relented back into the darkness. For a mere second, there was silence. Emily could hear her own heart pounding. Then they saw it. A giant cat-eye peered through the hole in the brush. It stared at James with a cold, calculating gaze. Holding her breath, she watched James prepare to strike. Suddenly there was a flash of lightning, and the feline eye backed away, fading into the darkness. The ordeal left James heaving for oxygen, covered in sweat and blood, so much blood.

     Being a nurse, Emily knew what was about to happen. "James, sit down," she commanded firmly, guiding him to a nearby rock. James was so exhausted he almost fell. He winced as Emily examined the deep gashes through his leg. He was bleeding badly. "We need to put your leg up to slow the bleeding," she said, reaching for a nearby stick and a piece of fabric torn from her blouse. "I'm sorry, Babe, this is going to hurt."

     James nodded, gritting his teeth as Emily tied the stick to his leg and raised it. He let out a painful moan.

"I'm so sorry," Emily said, crying.

James reached out, trying to wipe away her tears. "It's not your fault, Beautiful,"

His voice was laced with agony. "None of this is your fault."

Emily leaned into his touch. He was her rock, her protector.

     As the night dragged on, she lay by his side, trying to keep him as comfortable as possible. They couldn't stay in the cave forever, but she knew they weren't safe outside. She had always struggled with an overactive imagination, continually fearing the worst, and this was no different. James was slipping away, and she would lose him no matter how hard she held on.

     She squeezed his hand tightly, tears pouring down as she begged him to stay with her. "James, please don't leave me," she whispered, her voice laced with fear. "I love you. Please don't go."

     James looked at her with a weak smile, trying to reassure her. "I'm not going anywhere, Beautiful," he said, his voice barely above a whisper. "I love you too much to leave you."

She was physically and emotionally exhausted. She needed this nightmare to be over.

     In desperation, she slapped James on the chest, her fear and frustration getting the best of her. She immediately regretted it, sobbing and apologizing as she clutched onto him. "I'm so sorry. I didn't mean that." she whimpered.

     Emily rested her head against James's shoulder, feeling the weight of the world bear down upon her. She let out a sigh, feeling defeated and lost. All her fears had come to fruition, and she knew nothing else she could do.

"James," she whispered, her voice laced with despair. "I don't know what to do."

     But James didn't respond. He lay there, unconscious and pale, his breathing shallow and laboured. Emily's heart ached with grief as she watched him, tears streaming down her face.

     She clutched onto him tightly, her whole world crumbling around her. She couldn't bear the thought of living without him, of facing the future alone. She clung to him, praying for a miracle, for a way to keep him by her side.

"Please, James," she begged, her voice breaking.

James remained silent. His shivering had stopped, and she could feel him getting colder. Emily wept her heart heavy with grief and fear. Exhaustion overtook her.

     As if being held down by a giant weighted blanket. Something was odd. The cold, damp cave had given way to feelings of warmth and comfort. She couldn't remember where she was or how she came to be there. Panic welled up inside her.

     It was a bed, A warm, soft bed with real blankets. She could feel what she believed to be the sun on her face. She heard the faint beeping of a machine and the distant sounds of people talking and moving about. She wanted to open her eyes and see where she was, but she felt groggy. She tried lifting her head, which was heavy as if filled with lead.

     As she lay there, the memories of their ordeal came back to her. She gasped, trying to sit up, but the warm fuzzy feelings held her down.

     "Easy now, Emily," a soft voice said. "You're in the hospital, and you've been through a lot, but you're going to be okay."

     Emily's mind raced as she tried to process this information. The hospital? What was she doing here? And where was James?

She tried to speak, but her mouth was dry, and her tongue felt like sandpaper.

     Emily's mind was a blur as she tried to make sense of everything. Something was wrong; she could feel it. And she knew she wouldn't like the answer.

     As the fog cleared and Emily's started to open her eyes. Looking directly back at her was the friendly face of a doctor. He had a kind smile and a gentle voice, and she could tell he was excited.

     "Welcome back, Emily," he said, his eyes sparkling with warmth. "My name is Dr. Robert Sullivan, but my friends call me Dr. Bob. How are you feeling?"

     Emily tried to take in everything the doctor said. She had a headache, and her mouth felt dry, but other than that, she didn't feel too bad. She looked around the room, taking in the unfamiliar surroundings. A nurse was standing at the foot of the bed, and Emily's father was in a chair holding Emily's hand.

"Daddy?" Emily said, her voice barely above a whisper.

"I'm right here, sweetheart," his marvellous blue eyes held her gaze.

Dr. Bob smiled reassuringly. "You're in the hospital," he said.

     Emily's relaxed as his words sank in. She tried to remember what had occurred, but the last thing she could recall was the ordeal in the cave. She looked back to her father, and suddenly fear gripped her.

"What about James?" she asked, her voice laced with fear. "James!?" she yelled.

     Emily's heart skipped a beat just before James entered the room; an audible gasp escaped her lips. He looked tired but happy, and she could tell he was exhausted. He had two cups of coffee.

"Hey, beautiful," he said, his voice reassuring and hopeful. "Calm down, Babe. I'm right here."

He put the coffee cups on the table and stepped to the bed, taking her hand in his.

He leaned in with a gentle kiss and spoke, "Welcome back, my love."

Emily felt a surge of gratitude.

"I'm so sorry," she said, tears welling up.

James chuckled and brushed away her tears. "Don't be silly," he said, his voice gentle. "It's not your fault.

"What's the last thing you remember, Emily?" Dr. Bob asked, a look of concern on his face.

     Emily hesitated, trying to piece together the events since they left. She remembered the shipwreck, the island, the giant cat, and James dying in her arms.

     "I remember the shipwreck," she said, her tone sullen. "It was our honeymoon. I also remember the island and the awful cat. I recall James was trying to protect us and getting his leg shredded when he was attacked, and I thought I lost him."

     Facial expressions in the room ranged from shock to amusement. Dr. Bob chuckled and patted her hand reassuringly.

     "Well, I'm glad to be the bearer of good news. " the doctor's voice consoling. He continued, "there was no shipwreck. Two weeks ago, after your reception, your limo was stuck by a semi-truck," He paused," You've been in a coma with lots of medications. It's not uncommon for patients to have vivid dreams or hallucinations in this state. I can assure you James is very much alive and well. He's been by your side the whole time, and by the look on his face, he's overjoyed that you're awake."

     Emily's heart skipped a beat as the doctor's words sank in. A coma dream? She couldn't believe it. She looked over at James with confusion on her face.

"Is this all real?" she asked, her voice laced with disbelief. "Are you actually here?"

     James chuckled as he brushed away her tears, his eyes sparkling with love. "Yes, it's actually me," he reassuringly insisted. "Where else would I be." he winked.

     Emily's father stepped up, clearing his throat and kissed Emily on the forehead. "Rest now, my little Po-Tay-Toe," he said with a smile. "Soon, you'll be able to enjoy a real honeymoon. Everything is going to be alright."

"As long as there are no boats involved, I'm game," Emily said with a sarcastic smile.

Hark, prithee! I am David, a man of fifty years, and by ailment bound to Dilated Cardiomyopathy. The struggle with weight gain hath been a constant woe, albeit in my youth I was a walker most avid. I strode six and a half to fifteen furlongs a day, but my heart's ailment hath made the exercise nigh impossible. Perchance, doth the labour of the yard provide me with little sustenance.

Recently, after a septennium of non-usage, I didst venture to essay the treadmill's path anew. The enterprise was fraught with the greatest adversity of mental blockage, yet withal, I did consult my healthcare provider and made fit adjustments to suit my heart's condition.

Upon the treadmill's pathway, I began with a pace of 1.2 mph, and the incline none. Earbuds didst I wear, to isolate me from the outer world, and played a lively music list, of half an hour's duration. Anon, when feeling comfortable, I didst increment the speed, settling anon at 2.0 mph. After fifteen minutes, my knees ceased to ache, and I didst disregard the time. About twenty minutes hence, my arms, hands and shoulders were sorely fatigued. At the end of my music, two minutes' gradual slowing down didst ensue, and then from the treadmill's way, I didst depart, to report the exercise to mine accountability friend.

Verily, to recommence exercise after so long and with a heart's ailment, doth challenge the emotions. We are our own worst enemies, and albeit the truth be known, yet we oftentimes proffer excuses why we cannot exercise. Forsooth, this marks my umpteenth time, endeavouring to resume the exercise. But to the extent that one can endeavour physically and mentally, it is important.

Methinks, I exhort anyone sharing a like condition to first consult their healthcare provider afore initiating the exercise programme. Begin slowly and increase the intensity and duration thereof. The greatest hurdle is to surmount the mental block, yet with dedication and support, one's fitness goals are attainable. Adieu and good luck, dear readers, as ye strive to resume thy exercise regime!

     It was the middle of February in AverageTown, Canada, and the weather was bleak. The air was frigid, and the snow was piled high on the ground. Despite the gloomy weather, Marco was an upbeat person. He woke up early in the morning, even though it was still dark outside. He stretched his arms and legs, and his dog, Rusty, jumped on him to greet him.

     After brushing his teeth and getting dressed, Marco headed outside to start his car. He turned the key in the ignition, and the engine slowly came to life. He waited for a few minutes until the car warmed up enough to melt the ice off the windshield. Then he was off to start his day.

     His first stop was to pay some bills at the bank. He chatted with the bank teller, Linda, who was complaining about the cold weather. "I can't wait for spring," she said. "I'm sick of this snow and ice." Marco smiled and nodded. "I know how you feel," he said. "But we're almost there. Hang in there!"

     Next, Marco went to the landlord's office to pay his rent. The landlord, Mr. Singh, was also complaining about the weather. "This winter is never-ending," he said. "I can't wait for it to be over." Marco sympathized with him and replied, "I hear you, but at least we have each other to complain to, right?"

     Marco stopped by a corner store to grab a diet coke and to visit the store owner, David, a friendly man who had moved from Israel a few years ago. David was busy stocking shelves, but he took a moment to chat with Marco. "How's the winter treating you?" he asked. Marco replied, "It's cold, but I'm doing alright. How about you?" David sighed and said, "I miss the warm weather. But I'll survive. Spring is coming soon, right?"

     Throughout the day, Marco encountered many other people who were complaining about the cold and dreary weather. But Marco didn't let it get him down. He encouraged everyone to hang in there and reminded them that spring was just around the corner. "Before you know it, we'll be complaining about the heat," he said.

     By the end of the day, Marco was tired but content. He returned home and sat in his favorite reclining chair, snuggled up with Rusty. He closed his eyes and smiled, feeling grateful for the simple pleasures in life, even on the coldest and most depressing day of the year.

      As a yeoman of the mid-fifteenth century, I speaketh thusly. I never would have imagined the joy and merriment that comes from a night of karaoke. In my day, entertainment was limited to communal gatherings around the fire, telling stories and playing simple instruments. But now, in this modern age, I have had the pleasure of experiencing the thrill of karaoke.


     For those unfamiliar with the activity, karaoke involves singing along to recorded music using a microphone and a screen displaying the lyrics. At first, I was hesitant to participate in this strange and foreign activity. But after some encouragement from my fellow villagers, I took to the stage and let my voice be heard.

      The atmosphere of a karaoke night is electric. The room is filled with excitement and anticipation as each participant steps up to sing their chosen song. As I began to sing, I was overwhelmed by the feeling of unity and camaraderie in the room. No longer did I feel like a simple farmer, but instead a performer, sharing my voice with all those around me.

      The best part of karaoke, in my opinion, is the lack of judgment. No one is expected to be a professional singer, and the focus is on having fun and letting loose. I have seen even the most reserved of my companions transform into confident performers, belting out their favorite tunes with passion and abandon.

      Karaoke has also given me the opportunity to try new songs and genres of music that I never would have otherwise encountered. I have discovered a love for ballads and folk songs from far-off lands, and have even been inspired to learn the lyrics and melodies of these new songs to share with my fellow villagers at our next karaoke night.

      Karaoke has brought joy and laughter into my life in ways I never could have imagined. It has brought people together and provided a platform for self-expression and creativity. I would encourage anyone, whether they be a farmer like myself or a member of the nobility, to give karaoke a try and experience the fun and excitement for themselves.

Grandfather: It's the way you talk to yourself in your head. It's like having a secret superpower!

Grandson: Really? How does it work?

Grandfather: Well, let me show you. Watch me split this Oreo cookie in half.

Grandson: Okay.

Grandfather gently splits the Oreo cookie in half, revealing the creamy filling inside.

Grandfather: You see how I was able to split this cookie open so easily?

Grandson: Yeah.

Grandfather: That's because I believed in my mind that I could do it. My thoughts and beliefs about myself and the world gave me the confidence to take action.

Grandson: Wow, so your thoughts and beliefs can make you do things?

Grandfather: That's right! And the same goes for you, my boy. The way you talk to yourself in your head can shape your beliefs and emotions, and in turn, affect your actions and the world around you.

Grandson: Whoa, that's amazing!

Grandson: So, if I'm nervous about something, like going to the pool for the first time, can I change my thoughts to not be scared anymore?

Grandfather: That's right, little guy. When I was your age, I was nervous about going to the deep end of the pool. But I learned that I could change my thoughts and talk to myself in a way that made me feel braver.

Grandson: How did you do that?

Grandfather: Well, instead of telling myself things like "I'm scared" or "I can't swim", I told myself positive things like "I am strong and capable" and "I can learn to swim". And you know what? Those positive thoughts made all the difference. I was able to go to the deep end and have fun.

Grandson: Really? That's so cool!

Grandfather: Yes, it is! And you can do the same thing. When you're feeling nervous about something, try to find a positive thought that will help you feel braver.

Grandson: Like what?

Grandfather: Well, you could say something like "I am strong and brave" or "I can learn to swim". Just find a thought that makes you feel good and confident. And then keep repeating it to yourself, like a secret superhero chant.

Grandson: Okay, I'll try!

Grandfather: That's the spirit, buddy! And remember, your thoughts and words have superpowers, so use them wisely.

     For the past year, I've been taking Duloxetine (the generic name for Cymbalta) to manage the symptoms related to stress, and I have to say, I feel lucky that my doctor started me on this medication. It has been the perfect fit for me over the last year.

     However, with the guidance of my healthcare provider, I recently began reducing my dose of Duloxetine. While the decision to reduce my dose was made with care, the process has been accompanied by several side effects including nausea, insomnia, irritability, fatigue, sweating, and increased heart rate. These symptoms have impacted my daily life and made it difficult for me to concentrate and be productive.

     It's important to note that every person's experience with Duloxetine withdrawal may be different, and the severity of symptoms can vary. However, I wanted to share my story in hopes of helping others who may be going through a similar process.

     If you're considering reducing your Duloxetine dose, I highly recommend speaking to your healthcare provider for guidance on how to do so safely and with the least amount of discomfort. Additionally, it's important to be patient with yourself and to understand that these withdrawal symptoms may take time to subside.

     While the journey of reducing my Duloxetine dose has been challenging, I'm grateful for the positive impact it has had on my life over the past year and am determined to continue finding other ways to manage my stress and improve my overall well-being."

     Today I am recovering from some sort of stomach bug that got me yesterday. So today, I phoned it in. Today's post will be about taking a day off for your well being and self care.

The COVID-19 pandemic has resulted in millions of people shifting from traditional office-based work to remote work. With the convenience of working from home comes the added responsibility of maintaining work-life balance and taking care of one's physical and mental health. In this blog, we will discuss the importance of taking a day off due to illness when working from home.

Working from home can blur the lines between personal and professional life, making it difficult to switch off and take time off when needed. However, it's crucial to prioritize self-care, especially when feeling unwell. Taking a day off to recover can prevent the illness from worsening and minimize the risk of spreading it to others. Moreover, being absent from work while still feeling sick can reduce productivity and efficiency.

Many people may feel guilty about taking a day off from work, but it's essential to remember that you're not doing anyone any favors by pushing through an illness. Your health should always be the top priority. As a parent and a food lover, I understand the importance of mastering the art of making delicious pancakes. Not only are pancakes a staple in a well-rounded and enjoyable childhood, but the skills learned in making pancakes can also be applied to making waffles. I am excited to share a recipe for basic pancakes that will elevate your breakfast game and bring joy to your family.


To be crystal clear, I do not take pancakes lightly. First, I prefer to use my ancient griddle, well seasoned. Next, I will heat up the griddle on medium until it reaches and maintains 270F-320F. I check this using the infrared temperature gun. I ensure I have the griddle started long before I put my ingredients together.

While that is heating, I will take out everything I need for the task. I prefer the one-bowl method, which I will describe here. Take one large mixing bowl. Combine all dry ingredients. Whisk the dry ingredients with a fork. Mix them thoroughly. Next, I use my fork and move all the dry ingredients out and up the walls of the bowl, making an inner bowl, and I add all my we ingredients. I then mix my wet ingredients well without disturbing the dry stuff too much.

The real magic in fluffy pancakes is understanding the ratio of baking powder to flour and not overworking the gluten when you combine the wet and dry. When everything is ready, stir up the whole mixture until lumpy. Do not blend. Do not mix until smooth. Just until all the dry is wet and lumpy. Understanding that baking powder causes bubbles to form and get caught in the gluten fibres is to understand how pancakes get fluffy. Not enough baking powder or too much stirring, and you have flat pancakes.

Now it’s important to spray your griddle with oil and then wipe it off with a paper towel. You see, the oil will transfer the heat too fast and burn your lovely pancakes if it is left on the griddle. I only take the slighted film to be effective. Now add your batter to the griddle and cook unbothered until little bubbles pop without closing back in. When the bubbles are popping, it is not ready. When the bubble pop and leaves holes all around the outside edge, it is time to flip. Once you flip, I like to tell by the pancake firmness when it’s done, but usually, one to two minutes tops, depending on thickness, will finish the cook.

Add butter while it is still hot and move it to a plate. Enjoy. Make sure to try this with a nonstick pan and practice flipping from time to time just for sheer enjoyment. I wish you happy days and delicious pancakes. Remember only to use real maple syrup because that stuff is unbelievably delicious. Also, pancake recipes are not complicated. Print this and keep it on the back of a cupboard door, if you know what’s good for you.

Here is a basic recipe for pancakes:

Ingredients:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted or oil of your choice

You can also add some variations to the basic recipe, like using whole wheat flour, adding some vanilla extract, or using buttermilk instead of milk for a tangy taste. Also, for waffles, you just need to use a waffle maker instead of a skillet and maybe add a little more sugar and a little less baking powder than in the pancake recipe. Remember to experiment and have fun.

an extra hint. Make smaller pancakes until you know the temperature is just right so if you burn one it's not a great big one.
